I have done this before and it works. But my experience is as soon as you stop the diet, like really quickly after, it all comes back. It isn't permanent. Maybe that just my body.

Its just because you went back to eating more calories.
When you were on carnivore, you just ate less, mostly because you were more satiated from all the protein.
You go back to your normal diet and you suddenly start eating more again because you are not as satiated.
It isn't just your body. Its basic physiology.

A massive part of not gaining the weight back is to very very slowly reintroduce other foods back into your diet and very very slowly increase your calories to maintenance. You want your maintenance phase to be at minimum as long as your diet was.
