We were fortunate enough to get quite a bit of Watusi meat. A few packages say "tenderloin", which are bigger than the other steaks. I was wondering if I should just treat this like a typical steak tenderloin and reverse sear it.

Thoughts?

Also, wondering if anyone has had Watusi before? It's supposed to taste like a grass fed cow, but I have no idea.

Is it whole or cut into steaks?

If whole, stuff with garlic, season with salt and pepper, marinate overnight with fresh lime juice and wedges. Heat grill to 450 and grill whole about 45 minutes. 20 flip, 20 flip, 2 flip, 2 flip. Turn off burners and let rest on hot grill for 15 more minutes. Slice 1.5 inch steaks after resting.

If steaks, just grill it normal. 4,4,2,2 for about 10 total minutes.
