Powdered Gypsum is the way to go if you know for a fact the mud particles are suspended and its not catfish stirring up mud at bottom. You can get it from feed stores. Did this for thanksgiving and it was wonderful. There’s a video on YouTube by Meat Church that i followed but basically injected with creole butter, smoked at 225 until desired IT, wrap in foil with butter and let it rest 15-20 mins. Serve and prepare to be wowed ...
