Both are ridiculous but:
Mexico - we would force a change in the Mexican government (probably through military action) and their agreement with China would end.
South America - China is NOT sending an army up through the Darian Gap, they would get annihilated. Supply lines would be hopeless for them as well.

Let's say Mexico wants to completely tank its economy and put its people in the way of the entire US military.
Where would China land in Mexico?
They land in Baja and they deal with two-lane desert roads. That is of course if the roads are bombed out
Land in Sinola and they are deal with mountains and jungle.
that is not even getting to how the hell is china going to bring an army across the pacific without the navy sinking everything
