For the ending, Walt will shoot up Gray Matter with the M60 and then smoke the ricin cigarette.

I don't think it will be Grey Matter, but I've got a feeling that it won't be the blaze-of-glory, shootout with people that everyone is expecting. It will probably be just him shotting up a building or something.
I think maybe Jesse does start cooking again, and Walter goes and shoots up his lab.

I've been seeing these theories and have been trying to process how it could happen - I mean Walt is retired, what does he care?
However, there are 2 that I can come up with:
1. Jesse makes "the blue", but makes it terrible (I think that has been done by others trying to fake it.) and says it was Walt/Heisenberg
2. Jesse makes a batch better than Walt ever did - a near perfect purity
What else would make Walt come after him, from a "Jesse starts cooking meth again" standpoint?

There was some heavy discussion in last weeks thread about this. Jesse claiming to go after Walt "where he really lives." He knows Walt has a big ego and wants to be the best. The two theories you posted would be possible. Walt might start hering about some blue meth back on the market and want to stop it.
Also, it was discussed that Todd's people may want Walt to cook for them as payment for whoever Walt wants them to kill.

Well, that's Jesse, right now. Apparently, Walt thinks Hank has been neutralized. The obvious twist would be he discovers they're working together and that's what triggers the war. I still think that Lydia does something to force Walt's hand, perhaps this goes badly, one or more family members are hurt, and this forces an uneasy alliance between Hank, Walt and/or Jesse.
An even crazier twist I can think of is that, Walt goes completely into remission and cuts a deal to go undercover for the DEA to bring down Lyida & Co, which also triggers the war. That's tougher to imagine - he's apparently acting alone, as an independent agent, by the end - he has not been keen to do his own dirty work since he retired Mike (although he did bury the money, himself).
That "flash forward" scene was wonderful, because it answered the questions that are easy: People find out he's Heisenberg and Walt is still alive at the end. Duh. It doesn't answer the hard questions: Where's Jesse? Where's Hank? What happened to Skyler, Marie, Flynn and the baby? Why does Walt need a machinegun?

I'm not so sure it is Jesse. I don't think Walt knows that Hank is working with Jesse, but others think he does. He may want to eliminate Hank, since he knows so much.

Jesse wanted to get away from Walt imo. I think he'd do it if he thought he could trap Walt and/or Todd

Whats not to understand? The entire point of the show is to show us how a Good guy turned bad (Walt) and a bad kid turned good (Jesse). He doesn't want to cook anymore.
