After boil potatoes made into home fries in the air fryer

I’m sure some here have tried this but I didn’t see any threads. Not sure why I haven’t thought of this til now but these are like crack.
After being refrigerated for a while, just chop into small pieces for home fries, toss in some olive oil and put them in the air fryer on high heat until done. These took about 25 min at 400F.

So if you have boiled them, how do they not fall apart when you cut them up?

With the size of home fries, they shouldn’t fall apart. Zoom in on that top pic - you can tell how soft they are.
I was initially going to try doing potato chips and did a few that way, but many would have fallen apart and would not cook as well as home fries in the air fryer, given the shape of chips.

I haven't tried the air fryer, but I've deep fried them in even smaller cubes than OP's. I just partially freeze them and then cut/fry quickly before they thaw out.

Done them plenty of times. Kids love 'em. I spray them with avocado oil before going in the air fryer then flip and spray again about halfway through. Usually season with Lawry's Garlic Salt

anything you do with potatoes from au gratin to potato salads is better when using after boil seasoned potatoes

I forgot to mention, that these air fried potatoes were cut in half before they were put in the boil, so they absorbed a lot of seasoning. This is why I didn't season them at all before air frying. I may have needed to season them some if I had used whole potatoes in the boil.

They are great roasted as well. They get crispy on the outside and so creamy in the middle.

You want them to fall a little bit honestly. Those little craggly bits create little crunchy bits on the outside. If you want some videos on Michelin star chefs fries, that’s how they cook them. They boil them and then fry them partially for this purpose.

It makes sense. The texture of these home fries were far superior to any I've made with raw potatoes chopped and put in the air fryer.
