Anybody have a good charro beans recipe?

Always one of my favorite sides at different bbq joints I visit. Would like to start making them at home.

not homemade but these are shockingly good
doctored with some fresh cilantro & peppers, very tatsy

I’m just guessing but this is what I would do. Brown the bacon or chorizo, remove...Sauté veggies. Add stock/beans. Bring to boil then add meat and simmer. Seems like same way you would make red beans but add cumin and different spices

I made some beans using Aaron Franklin’s recipe a few weeks ago and they turned out great. I did not have brisket, so I used smoked ham ends and pieces. I imagine you could adjust the seasonings to your liking.

Yes, the Aaron Franklin recipe is good. I've made it a few times. The beans I've been getting at some of these bbq joints are a little different though.

Never was a fan of Charro beans, but I could eat a gallon of Borracho Beans .

Yeah baw it’s easy.
-soaked pinto beans (can use a couple canned as an alternative)
- several strips of bacon
- chopped white onion
- diced jalapeño or 2
- chopped garlic
- big chopped tomato or 2
- enough chicken stock to cover
*cut bacon into little slices, sautée till half fat released
*throw in onions and jalapeños into the bacon and fat and sauté till soft
* throw in chopped tomatoes and garlic and sauté for 10 mins, stir a few times
*Throw in beans and salt and pepper to taste and mix all up.
*cover with chicken stock by an inch or 2. Summer for 45 minutes. Keep tasting and adjusting seasoning. I like mine soupy.

I used Franklin's recipe for a batch last night. They came out awesome. They were a little spicy, which is fine for me, but I'd probably scale back the chili powder for big crowds. I also should have added a little more water in the last hour or so of boiling as they almost dried out.

I’ll vouch for the Franklin recipe also. Cooked it this weekend with a brisket.
Used Mexene Chili Powder, which has a great flavor, but not overly spicy. Also added some diced poblano pepper.
Cooked some usable brisket trimmings that I smoked for 2 hours.

I just used McCormick chili powder.
