Benefits Of Toasted Bread

It occurred to me that there has to be some health benefits to having your bread toasted, plus I love my bread toasted. Came across this site.

I doubt the claims made in that article. Toasting the bread may make the starches less digestible therefore not providing the blood sugar spike compared to regular bread but it still has the same nutritional content. Toasting bread does not add fiber to the bread not does it remove any of the fat from the bread.

Simply toasting bread for a sandwich adds texture and makes an okay sandwich a good sandwich. How people don't crisp up bread escapes me.
