Best fish for fish tacos (grilled)

Im not looking to beer batter/fry.

I recently used MahiMahi and they came out good, but I want to experiment with other fish. I make my own blackening seasoning which is good.

What do you guys like?

Salmon, but I wouldn't blacken it.
Tuna with fresh mint and basil and a ginger/lime mayo
Halibut
I keep a bag of frozen haddock that is good for an impromptu meal. I may do that tonight. I make a chipotle mayo for those.

mahi, snapper, cobia, grouper are all going to be really good no matter what.

fresh caught speckled trout and redfish will taste good as well.

Are you grilling directly in grates? Fish basket? Griddle?

If you’re doing it on grates then you need a fish that holds together well. Cobia is a good grilled fish. Same with swordfish.

Fish basket or griddle will give you more options

To answer your question, I would stick with your mahi or maybe halibut.

As an aside to your question, I was keeping my nephew recently and he wanted fish sticks. I made some really tasty fish tacos using those frozen fish sticks. If you mix up a good slaw with a good sauce, the fish doesn't matter much.

Every time I try to grill flounder (filets), it turns into a complete mess. Just doesn't hold together well.

i imagine it would be too delicate for the grilling from physical and taste stand point.

We eat fish stick tacos too. Easy and a nice taste. Nice to buy bags of them at Sams. you can get enough to make a lot of tacos.
