I've also thought about doing it like an empanada or Natchtoches meat pie. Thoughts? I've also been putting just about anything into an eggroll recently. I've done corned beef brisket and cabbage that way, but not smoked brisket....

I smoked a brisket yesterday and have a couple of pounds left. Looking for something new to do with it. In the past, I have mostly just made sandwiches with the leftovers. I have also done brisket tacos and thrown it in a chili. Anyone have any other good ways to use it?...
