Chicken Oysters?

Had this cut as an app tonight. Chef fried them and served them Nashville hot style. Amazing. I’ve always eat these on whole chickens, but he was able to get them as a cut.

Cheapest way to get them is to buy bags of chicken leg quarters when on sale. There are on average around 8-10 leg quarters per bag depending on the size of the quarters. Rouses will put 10 lb. bags of leg quarters on sale for as little as $.69 a lb. and occasionally lower.
Each thigh will have part of the pelvic bone attached where the oysters are found. I will trim that part off, along with any excess fat and put that in a stock pot to cook down to make a very rich chicken stock. When done, I'll remove the bones and fat and pick any meat off that to give to the cat over the next few days to eat.
It would be easy to remove them if you wanted to before putting those parts in a stock pot and fix any way you wanted. I never bother with it since it's seems like more work than it's worth for that little morsel of meat.

If someone has the as a cut, then go for it. Other than that, I don't see where the juice is worth the squeeze trying to get them yourself from whole chickens or leg quarters.

Same here- I'm not going to harvest them from a bunch of leg quarters for a meal, but you can bet your arse that's the one of the first bites I'm getting from my $5 Sam's rotisserie chicken

This is always what I sneak onto my plate when I carve the turkey for Thanksgiving every year.
