Cooking Boudin help

I bought some uncooked boudin and realized I don't know how to cook it

It's cooked dude, just needs to be reheated. Some grill, some steam, some microwave. You do you.

There is a German deli close to us that makes their own sausage. The sausages are mostly uncooked too.

There is a Cajun Restaurant next door to them that asked them to make boudin for the restaurant, so they started making it. I assume they sell it to the restaurant uncooked.

But the meat and rice is cooked before being stuffed. That must be some weird fake boudin.

The pork in boudin is cooked before it's mixed with rice and made into links. You just need to heat the link. I like it grilled.

Never seen boudin where the pork is not cooked.

I spray the pan for my toaster over with a little Pam. Lay out 2 links and bake for 12 minutes at 425, comes out with the skin slightly crisped but doesn't bust.

I also like doing it in the toaster oven. However I like to put some oil in the pan and heat it up, and then put the boudin in. Gives it a nice crust.

I called and sure enough the sausage is uncooked.

They said they use natural casings and not collagen. Not sure why that is relevant though.

They mixed raw pork with raw rice? Maybe just the casing isn't cooked?

When you say sausage is uncooked, does this mean the pork and liver are uncooked/raw?

I have never heard of a recipe where the pork is uncooked.

I don’t know. She said the sausage was raw.

Not the owner though. Just the person on the phone.

Cooked it in a pan with little water for about 12 minutes.
I’m no expert but I thought it was really good

I have encountered this here in Georgia. The rice is cooked but the pork is raw. I tried it once and it tasted nothing like boudin. I'm not sure if you are familiar with Ogeechee Meat Market here in Savannah but they make it.

D and J grocery in Gonzales sells it raw and cooked, they say to cook the raw by leaving it in the plastic vacuum pack and put in boiling water for 15-20 min
