Cooking with Gator meat.

i've tried it every possible way. but, the best way i've eaten it was as follows:
get the jaw muscle (most tender meat on the gator) and cut into 2" pieces, season them, wrap in bacon, and bar-g-que.

GATOR IN LEMON SAUCE
Ingredients:
1 to 1 1/2 pounds alligator meat, cut in bite-size pieces
salt
ground cayenne and black pepper, to taste
1 teaspoon Old Bay Seasoning
1/4 cup plain low-fat yogurt
1/4 cup flour
1/4 cup olive oil
2 cloves garlic, thinly sliced
Sauce:
1/4 cup seasoned liquid from boiled alligator
2 tablespoons + 2 teaspoons cornstarch
3/4 cup dry white wine
juice of 1 large lemon, or about 4 tablespoons
Preparation:
Cut alligator meat into bite-size pieces; sprinkle with salt and red and black pepper. Place alligator in a large saucepan, cover with water and add Old Bay Seasoning. Bring quickly to a boil; boil 2 to 3 minutes. Remove gator from liquid (reserve liquid), drain, and let meat cool. Dip meat in yogurt and then in flour.
Heat oil with garlic; remove garlic and lightly brown meat. Transfer meat to paper towels to drain; keep warm until sauce is done. Arrange meat on plate and serve with the sauce for dipping.
To make sauce: In a small saucepan, combine 1/4 cup reserved liquid and white wine; stir in cornstarch. Heat and stir until mixture starts to thicken. Add lemon juice and cook until thickened.
Alligator recipe serves 4 to 6.
GATOR BITES
Ingredients:
2 lbs of Alligator meat cut into strips or bite size pieces
Tabasco or other Louisiana Red Pepper Sauce
Water
1 Cup of Flour
1 Cup of Cornmeal
Oil for Frying (Peanut or Canola)
Cajun Seasoning
Directions:
Marinate the meat in enough Tabasco to coat all of the alligator meat
Set it in the refrigerator for a couple of hour, then add enough water to cover. Let sit in the refrigerator overnight. Heat the oil in a frying pan. Mix the flour and cornmeal. Roll the alligator meat in the flour/cornmeal mixture and place in the hot oil. Turn once, to brown other side, remove and season immediately.

GATOR TATERS
Baked Grilled potatoes:
4 potatoes
Oil
1/2 pound butter
Potato sauce:
1 sweet onion, chopped
1 cup mayonnaise
1/4 cup sour cream
Salt and pepper
Fried Gator:
2 pounds gator tail cut into chunks
Buttermilk
Flour
Salt and pepper
16 ounces vegetable oil
1 cup grated cheddar cheese
1 cup grated Monterey jack cheese
Sliced green onions, to garnish
Wash and coat potatoes with a little bit of oil. Pierce each potato with a fork, wrap in tin foil, place directly on hot coals, and cook for approximately 45 minutes. Use tongs to turn potatoes often.
In a bowl, combine all of the ingredients to make the potato sauce, and mix well.
In a large bowl, toss the gator chunks into the buttermilk, and dredge with flour that has been seasoned with salt and pepper. Using a large skillet, heat oil to 350 degrees F. Fry gator chunks until golden brown, approximately 4 to 5 minutes. Split potatoes and top with butter and potato sauce. Top potatoes with 2 pieces of fried gator chunks on top and sprinkle with cheese and green onions.

Drain vegetable oil, leaving about three tablespoons in skillet. Add the rest of the onions, celery, garlic and bell pepper. Saute until tender. Add vegetables, marinade and all other ingredients to meat. Cook for 45 minutes on medium heat. Season to taste and serve over rice.
