Crawfish Boil Question
Posted on 5/5/21 at 12:15 pm

Does anyone have a good system/formula for calculating the number of vegetables and/or Sausage to throw in the boil? Either based on the number per lbs of crawfish OR based on the number of guests. We fly them to Savannah, 150-180 lbs or so. Every year we ALWAYS have way too many vegetables left over. (I personally don't waste time on the vegetables since I only get crawfish once maybe twice a year!) I remember seeing a cool jambalaya estimator on here forever ago and wondered if anyone had come up with a crawfish veggie calculator! :) Thanks guys!

I always toss in a 3 lb. bag of new potatoes (small red ones), about 8 ears of corn cut in half, 1 lb. of mushrooms,
1 whole bunch of celery cut in chunks, 5-6 onions cut in chunks, several heads of garlic with just the top end cut to expose the toes a bit, several lemons cut in half and squeezed into the pot and toss in the rest of the lemon,
a dozen or so bay leaves, 3 lbs. of sausage.
You can use the leftover vegetables in other dishes. Potatoes make an excellent potato salad or dice them up a bit and put them in an omelet.
Same with the sausage that can be used for tangy omelets.
Check out "After The Boil Soup by Cajun Ninja" on u-tube for a great recipe to use all the leftover vegetables and tail meat from a boil. It's a hit in our house.
ETA: Should have said this is what I use in a 35-40 lb. sack when I boil.

Veggies are always based on # of guests for me.
I won't give you my formula because it's based on a non-Louisiana crowd.
Just figure out how many cobs and potatoes each person will eat. More than 2 per person is probably too much, depending on the size.

The potatoes are often quite small. Most people eat 1-2. Probably not every single person eats an eat of corn, but many do. Rather than a link, more like 2-3 bites of sausage.

My standard recipe for one sack serves between 4-6 people. I do 1 bag of the red potatoes, one 12 pack of frozen corn, one bag garlic, one container mushrooms, one pack of sausage. We don't usually have too much left over. Mostly garlic but I like having that to use in other dishes after the boil.

Half a small potato per person
One small ear of corn per person
1/4 of a link of sausage per person
one bite of an onion per person (a ring or two)
one clove of garlic per person
8 lbs of crawfish per person
That is rough estimation on what actually gets eaten at my boils it seems

Not really and I find I always have leftover extras

Also, if you want to make your veggies stretch further, cut them in smaller pieces. For instance, cut your potatoes in half. Some people will start eating a potato and not finish it, so lots get wasted.
