Crock pot red beans recipe

Cover beans (camellia) with several inches of water and bring to a boil, remove from heat and cover for an hour. Drain and rinse.
I like to brown whatever meat (usually ham, smoked sausage, or a hock) in a pot, then add in trinity just to wilt it. Then add this and beans into crock pot. I think I usually add about 4-5 cups of water or chicken stock. Will let it cook on low over night if while we’re at work. A quick stir and mash with spoon and they are good to go. I season after they’re cooked, there’s so much salt in the sausage or ham. Come out

Crank on high for an hour. Then, down to low until you get home. Then, back to high for an hour. 8 hours total.

Here... dump your bag of red beans, all your sausage(raw), onions, peppers and garlic. Season the piss out of it. Dump in 8 cups of water: low for 8 hours. When you come back it’ll be silky smooth gravy with perfectly cooked beans and delicious sausage. Cook some rice

Soak 1 lb dried red beans overnight
In the morning:
Dice up the trinity + garlic, place in crockpot (if you ain’t got time for that use Guidry’s, I use about a cup full per lb of beans)
Dice up smoked pork sausage sausage, place in crockpot
Drain beans, place in crockpot
Add the following
1 bay leaf
(You can vary the next few ingredients to your taste, but this pretty much works for me)
2 teaspoons apple cider vinegar
1/2 teaspoon chili powder
1/2 teaspoon thyme
1/2 teaspoon black pepper
1/2 teaspoon kosher salt
Pour in chicken stock until beans are completely covered. (I typically use kitchen basics)
Turn on pot to low, go to work, arrive home in the evening to the aroma of wonderful red beans.
Turn off crockpot.
Cook rice(typically use long grain, but when feeling saucy, I use a jasmine, and when feeling extra saucy, I’ll use basmati), while rice is cooking make cornbread. (the wife likes Jiffy, so we use jiffy)
Once rice and cornbread are cooked serve beans over rice with cornbread on side, or crumble over beans with a couple of splashes of Crystal, not too much, just a little bit.
I like to pair beans with an ice cold Budweiser.

I’ve found it hard to get the beans to come out creamy in a crock pot. I prefer the stove.

Good smoked ham hocks are great in red beans and, particularly, with the crock pot version when you aren't browning meats.
