Deep dish Chicago style pizza w/ store bought dough or pie crust?

I’m craving a Chicago style deep dish pie and am looking at alternatives to making homemade dough. There are some online recipes using store bought pre-made pie crusts or refrigerated pizza dough like from Pillsbury. I plan on using my cast skillet if I go the dough route. Has anyone had any success using either of these store bought crusts or should I suck it up and make my own dough?

I use 0,0 flour for my pizza crust over all purpose flour

This is what I do. Whole Foods dough in a cast iron pan.
Sliced provolone on the bottom. Topped with a layer of mostly cooked sausage (to get rid of the grease). Then a topping of veggies mostly cooked (to get rid of the water). I like onions, peppers, mushrooms, tomatoes and garlic. Then topped with mozzarella cheese.
Then indirect on the BGE grill.
I also like to do the same thing with non pizza ingredients. Broccoli, Cauliflower, mushrooms, onions, ect with cheddar cheese is a good one.

Don't have alternatives for making dough but I used this recipe last weekend. It was easy, and very good.

We shipped them from Giordano's one time.
It's pricey to ship though and not something we would do often.

I order from Lou malnatis and the frozen stuff they ship is better than most of my local pizza joints.

Just ordered 2 from Lou Malnatis for my loud arse old Chicago buddy I golf with that bitches he can’t get any good pizza around here! He might have a heart attack when I give him these deep dish pies.
