Filipino Inihaw na Manok (Chicken Barbecue)

I decided to try this today, and I found a number of recipes - all used vinegar, garlic, bay leaves, brown sugar, etc. Some used banana ketchup, others used chili sauce. I used chili sauce.

I marinated a dozen chicken thighs for 24 hours in the following marinade:

1 cup chopped onion
1/2 cup distilled white vinegar
1/2 cup apple cider vinegar
1/2 cup soy sauce
8 large cloves garlic
2 tbsp. (packed) dark brown sugar
4 bay leaves, crumbled
1/4 cup chili sauce

I put the chicken skin side down in the sear zone to give it some color and then move it to indirect heat for the rest of the cook. I poured a little marinade over the chicken before putting the lid down.

Here's where we are just before putting the lid down. Will serve it over rice with a side of broccoli.

Looks good, I love Filipino food pancit, adobo, lumpia, picadillo, and luchon are great.

Looks excellent, Jax. I ordered a slow n sear and cannot wait to grill when I get home!

I love mine. I know people say you don't need it, but the slow n Sear with the drip n griddle work really well for me. I do a lot of two zone cooking, in addition to smoking. I love the process.

My dog knows that something smells good. She settles down by the grill when I'm cooking.

Some. Mostly I cover it with tin foil and it catches the grease. I cook burgers on it occasionally. It sits beneath the grill and controls the flow of air for the DigiQ, too. The DigiQ helps me control the flow of air and gives me pellet grill like temp control.

Did you use boneless or bone-in thighs? I can't tell for sure from the picture.
However, they look damn good either way!

I assume bone in. I’ve never seen boneless thighs with skin on. Is that a thing?
