Fried Catfish Recipe

How do you fry your catfish? I’ve heard mustard, buttermilk, etc. what’s the best?

I do mustard and hot sauce for coating. Louisiana blue box/bag for breading.

No binders are necessary. I go from Ice cold water directly to the fish fry and into the oil.

season well, dip in milk, coat in a combo of corn flour and corn meal. Fry until GB&D

Season the fish, dip or soak in buttermilk but not for long.

I use a mix of corn meal and the unseasoned Louisiana fish fry for the breading.

Edit: also if frying filets, I slice them into 2 or 3 pieces depending on size at an angle to get some crunchy edges. Also find that helps with serving portions with a larger crowd. Less waste.

Rinse and trim filets to nugget size.

Soak in buttermilk 30 mins.

Toss in Zatarain's yellow box.

Fry 3-5 mins 375- or until they float

Agreed, keeps the fried-coating light and tasty. You can't beat it. From the ice cold water, to a bowl with Zatarain's Fish Fry Seasoned brand (lemon added), shake, place in fry basket, and drop em. Enjoy!

Agreed. Started doing this last year and it's my preferred method now.

I stopped using binders, just cold water to 50/50 fish fry/corn meal. I like the taste of the fish to shine through and not the salt in the fish fry.

I either do a watered down mustard or just water, but I always do a combo of corn flour/corn meal.

Try subbing ice cold beer for the water. Then to corn flour/ corn meal mix (I do 50:50, seasoned). Hot grease. I gave up the mustard hot sauce mixture that I grew up on and used since the’60’s.

Whole fiddlers soaked in LA hot sauce then tossed n seasoned corn meal is how you fry them. Jeesh. ??

Spahrs Recipe

Dip in Louisiana Hot Sauce
Batter in Indian Girl Cream Meal
Fry in vegetable oil till it floats
Strain on a wire rack
While it's still hot sprinkle with salt
