I smoked a brisket yesterday and have a couple of pounds left. Looking for something new to do with it.
In the past, I have mostly just made sandwiches with the leftovers. I have also done brisket tacos and thrown it in a chili.
Anyone have any other good ways to use it?

Brisket Shepherd's Pie?
That sounds good, but I think I'll save that one for cooler weather.

I've also thought about doing it like an empanada or Natchtoches meat pie. Thoughts?
I've also been putting just about anything into an eggroll recently. I've done corned beef brisket and cabbage that way, but not smoked brisket.

fricking nachos.
Wasn't in the op, but I have done nachos with both brisket and pulled pork. Both are great.
Haven't tried fricking nachos yet. Maybe next time.

Enchilada casserole type thing using cream cheese, peppers etc. mixed with the brisket, then top all the roll ups with a mixture of red enchilada sauce and heavy cream. Top with shredded cheese and bake.

My MIL used to make that. Really good! Take an Omeprazole before eating.

We make brisket nachos often with left over. Easy to throw together and add whatever you like on yours.
Might see if the wife(no pics) would be into fricking nachos

Decided to go with bbq brisket pizzas.
Gotta love the guy who asks for suggestions, then doesn’t take any of them.
I do appreciate the suggestions and will bookmark this and try some of these next time, or maybe tomorrow since the pizzas didn’t use up much brisket.

Daube. Slice it thick, make a red gravy and let it cook down for a good couple hours and then add the meat to cook down for another hour or more.
I find the longer you cook a red gravy, the more mellow it gets and it's not as acidic.
Eat that over pasta and make garlic bread and a nice salad to go with it and you'll have a fine meal.
