Cook your rice in the AM, lay it out on sheet pan to cool and dry out a little.

Add some thawed frozen peas and carrots to your fried rice.
I sauté my vegetables in butter. I start my meats in vegetable oil and finish with butter. I add teriyaki sauce to everything but ymmv.
I’ve been experimenting with different recipes I’ve found online for ginger dipping sauce but I haven’t perfected my own recipe yet. I use fresh ginger, fresh lemon juice, rice wine vinegar, and I like to add a touch of turbinado sugar. Some places you can look for recipes are at SimplyHappenings.com, Food.com, and Allrecipes.com. They’re all fairly similar so you just have to figure out what you like. Make it a day ahead of time if you can.

I tried just using butter for my meats but it didn’t work as well. I wouldn’t say it burned, and I don’t have a problem with brown butter, but just using butter didn’t seem to be quite up to the task. Then I remembered that they start with oil and finish with butter at the Japanese steakhouses I’m trying to imitate and I think that method works better. It’s still buttery but it seems more “clean,” if that makes sense. Maybe it’s an issue with absorption and the smoke point of the butter. I don’t know.
