How do I make imitation crab meat out of redfish

Got a larger red I want to try to make some crab meat for crab cakes or whatever else. Thanks

Boil it in water seasoned with bay leaf , celery salt, liquid crab boil and cayenne

You can cook it and make fish cakes with the meat the same as you would a crab cake pretty much.

bone and skin the filets and put in a cheesecloth bag.
simmer the bag in a pot seasoned how you like your crab boil
remove, flake and use

I do this with sheepshead sometimes when I am staying at the camp.

Could also try making redfish courtbouillon.

-Get a pot of salted water boiling and add some liquid crab boil, you want it well seasoned
-In a separate large bowl make an ice bath
-Cut your fish into 1/2" chunks
-When your water gets to a rolling boil drop a little bit of the fish chunks in and boil for 2 minutes, you dont want you water to drop below boiling so only add a little bit
-remove and go straight to the ice bath
-remove and drain
-put in a uncovered container and refrigerate to dry it out a little
-use as you would crab meat

just boil it in crab boil seasoning and then crumble it up
its better with sheepshead because that has no flavor of its own.
drum and redfish have a bit of a tang to the meat so it wont come out as good as sheephead would but it will still be good.
to be honest its best if you just make fish balls or patties with drum or redfish.

Fish Balls or Patties
Ingredients:
2 lbs pre-cooked & broken up redfish or drum meat
1 can (15oz) panko unseasoned bread crumbs
1 large yellow onion, minced
3 heaping tablespoons minced garlic
3-4 heaping tablespoons mayonnaise
2 eggs
1 stick butter (melted)
3 heaping tablespoons chopped parsley
1 teaspoon red cayenne pepper (optional if you want it spicy)
Directions:
Note - it is much better to poach the fish in some water seasoned with crab boil seasoning
1. In a sauce pan melt the butter and throw in the onions and garlic and cook until onions turn clear then put in refrigerator to cool.
2. Put cold butter and onion mixture into a large mixing bowl and mix in everything but the fish goes in last and then the bread crumbs.
3. Shape mixture into balls or patties and place on a cookie sheet.
Makes around 16-20 or so 2" sized round balls or 3" round patties.
Cooking:
pan fry with pat of butter until golden brown.
for baking just place on buttered baking pan and bake @ 350 degrees for 20 minutes until golden brown, then flip over and bake for 10 more minutes to brown the other side.

you can grill on the half shell....
baste with butter, cayenne, generous amount of honey, parsley and S&P.
Grill until you can easily flake off with a fork. Sometimes it gets so light you can actually blow it off.

Sheepshead makes the best faux crab meat/crabcakes. Downside is that you need a damn reciprocating saw to clean them. Though starting from the tail using a saw makes short work of them.
