How do you fry your shrimp?

What type of batter/breading/seasoning/fry do you use? I can never seem to get mine just right.

I use corn flour mixed with corn starch and season it. I typically lightly coat my shrimp with buttermilk or even just ice water.

Shrimp coating varies so much.

salt and pepper to taste then just throw in a bag of fish fry/corn flour straight just like that. same with trout, flounder fillets, or redfish.
shake off loose flour and fry, you taste shrimp and not a bunch of batter BS coating a lot of people use.
save the batter for something that has no flavor of its own and you need to add flavor to it like catfish

Peel all the way down to the last ring near the tail, butterfly, drop shrimp in egg and milk, then batter with Zatarans. I personally prefer the Zatarans over Louisiana shrimp fry. Drop in hot grease. Easiest thing to cook it in would be a Fry Daddy

My dearly departed friend Tim Hood who owned the chimes, who I think has the Krispy Kreme donuts of fried shrimp marinated them in egg whites with your favorite seasoning but the kicker is self rising flour. I’m on Grand Isle now cooking them the same way.

Same here. Val's Marina marinated their shrimp this way. Egg whites + hot sauce + black pepper then double dipped in AP flour IIRC. Corn meal/flour cannot even come close.

I grew up eating Val's fried shrimp and only Kevin's comes close to theirs. I am a fried shrimp snob and corn meal/flour is a big NO! Oh and butterfly those shrimp!
At home I use a recipe from River Roads II. If you're interested OP I'll post it.

First they go in flour with Slap Ya Mama and paprika
Then they go in a milk/mustard wash
Finally 2/3 Panko, 1/3 Italian bread crumbs.
Used to do just the flour batter, but my kid got hooked on Panko batter for fried pork chops and started asking for Panko on the shrimp. I stuck with flour for mine for a while, but converted pretty quickly. Panko battered is awesome.

1 teaspoon salt
1 egg
1 cup ice water
1 tablespoon melted fat
2 pounds large shrimp

Mother-in-law does equal parts AP flour and pancake batter and uses 2 cans of the Crisco lard to fry in. Best fried shrimp I ever ate.

i just wet them toss them in Zatarain's seasoned fish fry and fry them. I hate thick batter on seafood.
