I do the same . Have the filets in ice water while I get everything ready, pull them out give a little shake and straight into the batter. I just use Zatarains spicy. And straight into the fryer. Always get a nice thin crispy layer and ths fish is never overcooked. Seen them do it this way on one of the local fishing show awhile back.

As an update I soaked them in buttermilk and hot sauce for nearly 8 hours and they turned out great. YMMV

Fried these basses up last night. Milk/hot sauce, Louisiana blue bag, 350 deg oil.
