How long do you cook your red beans?

I generally try to go at least 3 hours. Basically as long as possible.

Nothing wrong with adding a can of blue runners to a pot of red beans for the creaminess.

I did a pot yesterday. Soaked them for probably 6 hours. I could have gone longer on that, I should have got them in water earlier. Cooked them around 3 hours with a slightly ajar lid, not fully covered.

I've probably cooked several hundred pounds of beans, mostly red kidney beans in my lifetime. I generally cook them 3-4 hours on a low boil, uncovered.
I don't soak my beans before hand but for a few minutes while I'm chopping up my seasonings to go in the pot. I'll open a 2 or 4 lb. bag of beans, put them in a large stainless bowl and cover them with hot water, cut up my seasonings and meat and then drain the beans once the pot comes to a boil before putting them in the pot.
I will put chunks of ham, salt pork or ham hocks in the pot in the beginning and about 1 hour before the beans are done, I'll add my sausage, either a good quality smoke sausage or andouille. That way the flavor of the sausage is imparted into the beans and gravy but not entirely cooked out of the meat.
When done, the beans are very creamy and chock full of flavor.

Soak overnight and simmer 3-4 hours. First 2.5 hour with the lid on, last 30 minutes to and hour with the lid off.

Don't know about some of you folks but I use a heavy metal heat diffuser under my pots on my gas stove to evenly disperse the heat. That way I don't have to be on top of things as much and the beans won't scorch due to hot spots if I get busy doing other things.

My beans take about 8 hours in the crockpot. No soaking.

We only cook the beans until tender, maybe 75 to 90 min. The stock takes hours.
