How To Cook A Whole Alligator?

Would anyone like to share their recipe in cooking a whole alligator? I normally cook whole hogs on indirect heat all day and would like to try an alligator. I’m looking for ideas for marinades, seasonings used, time per lb, internal temp or when to pull from the smoker, and what is a good size alligator to cook? I use the 48 cinder block pit method for cooking.

First, grab a cleaned alligator off the street in Lafayette…

Only thing I've got is wrap it with lots of bacon so the fat helps keep the meat more moist than just cooking it with just seasoning on the meat.

Just throw it on the pit and display it at the LSU-Florida game.

I have done it once. I cooked it just like a pig on indirect. Seasoned it just like a pig. I will have to find what temp we did it to but as far as size, i would go smaller rather than bigger. Like anything else, the meat will be a little tougher on the larger ones.
