Ideas for cooking beets (purple)?

Can someone give me some ideas for cooking beets? I'm not a big fan but am looking for some recipes for the kids.

I generally hate beats. But slicing them in into 1/2" slices and rubbed with olive oil, salt and pepper, and roasted in the oven until tender is pretty good.

Wash them really well, keep a little of the stem end so you can handle them while peeling. Wrap them in foil and stick them in a 450F oven for about one hour depending on size.
Take out of oven and let them cool enough to handle, use a paper towel to rub the skin off. Slice and serve with a little salt and pepper, olive oil, goat cheese and roasted walnuts.

We take fresh beets, peel them, slice, drizzle olive oil over them salt lightly and then roast in the oven at 400 for about 15 minutes.
Absolutely love roasted beets.
If they are canned, we either eat them cold from the can or heat them and eat them hot. Chilled sliced canned beets are nice in a salad.
If you can find "Tiny whole beets" in the can, they are tasty.
Note: If you roast fresh beets and eat enough of them, you will experience a purple/red surprise a day or two later on the throne.

The roasted beets go well with a plain yogurt, little balsamic, lemon zest and honey and sea salt.
I like to use the juice from the canned ones to pickle eggs and onions. Makes great looking red onions and eggs.

especially for the kids, boil or roast, and put s/p and butter on them................tastes like corn on the cob

Good luck with that. What kid loves beets? Mission impossible.
For those old enough to remember, there was this stuff for kids back in the early 70's, which included "I hate beets", so I guess make 'em look like french fries.

If you get the urge, scoop up a handful of dirt and eat it. You won't know the difference. The only thing on Earth I will not eat.

Another vote for roasted. Also don't forget the beet greens....better than mustard or turnip greens.
