Black Pot guys.. got a question..
I have been cooking Jmabaylaya for years in my 15 gallon pot, but honestly have never used parboiled rice.. always used Mathama Extra long grain.. Was asked to cook tomorrow for a function that they bought all of the supplies.. and they bought 10lbs of parboiled rice.. anything I need to do different of using parboiled rice?

That's where I draw the line. Nope, I would go buy my own rice and donate that shite to the homeless.

It's been discussed in the past. Some say it doesn't soak up the flavor as well.

It's less than $10 to buy 10 lbs of non-parboiled rice. Save yourself from the stress and just buy that yourself.
This is why I try not to let people shop for me when I'm meal prepping, especially when it's people who don't know much about cooking.

You can add more water than you normally would and it won't turn into mush. It won't have the fluffiness of a good jambalaya with real rice though.

I use it and like it better, I find it doesnt turn to mush as easy.
But I know that its not the purist way to do it.

Yes, good move.
Parboiled rice in jambalaya is a mortal sin.

The first jambalaya I made was with parboiled rice and it turned out just fine. It was a Paul Prudhomme recipe so it had tomatoes in it.
Downvote away, if you must.

Paging Stadium Rat,,,,,I can pretty much guess what he’s gunna say, because parboiled rice isn’t in the Jambalaya Calculator

I think parboiled rice is more forgiving and I like how it keeps its rice shape.

No parboiled for me, unless you need to hold at temp for a long while. I don't like the texture and sometimes it tastes too much like brown rice.

Parboiled hold its shape and won't go to mush, I've used both no big difference to me. I've never had any complaints either way.
When we do a cook off we use parboiled because we are out there for a few hours
