He has retracted his recipe and now supports the most badass greatest steak ever known to mankind.
ETA: He does respect a bear steak, but it is no way superior. He doesn't mean to imply that on any level.

The benefit of searing in butter is you milk solids will brown while doing so. If you baste the steak as it sears the brown solids will cling to the steak & add a nutty flavor. It’s hard to beat
