Leftover pork chop ideas?

My wife baked some pork chops last night in a deep pan with onions, potatoes. They came out drenched in its on juices and flavorless.
They were horrible!
Any ideas on what to do with the leftovers other than give them to the dog?

Chop them up to a pretty fine state, saute some onions, thinly sliced bell pepper and a bit of garlic in a pan, add pork chops meat to pan then add your favorite BBQ sauce and cook it down for about 20 minutes. Salt/pepper/hot sauce to taste.
Put that on a pistolette or burger bun for some BBQ pork sandwiches.
That's all I've got------OH, and keep the wife away from the stove/oven.

I won't.
That's why Im here asking for ideas to make them better.
Don't really want to waste an entire pack of pork chops but I'm not opposed to chunking them if I have to.

maybe pork fried rice or something along those lines... let the teriyaki and soy sauce add flavor to them.

Dice up the meat and use in either a stir fry or fried rice, or use the meat in a pasta.
Cook down some onions and mushrooms then put the chops in there with some broth and let them simmer for a while

Cut into strips along with onions and bell pepper.
Heat up a cast iron skillet and make fajitas.
Use fajita seasoning if you have it, if not just taco seasoning will work in a pinch.

A can of coconut milk, a couple of tablespoons of Thai curry paste, and some chopped onions, peppers, garlic, and maybe mushrooms. Simmer with the leftover pork chops. Might need more liquid, so maybe a cup of chicken stock. Finish with fish sauce, lime juice, and a bit of sweetener of your choice. Serve over rice. Or not.
