Looking for a unique chili recipe

Entering a chili cookoff with friends and I’m curious if anyone has an ace up their sleeve for some chili.
I’ve got a favorite recipe that makes great chili at home but I’m trying to win this thing.
I want to know your secrets, is it technique? Secret spices? Unique type of meat?
Most likely going ground beef route unless i can get my hands on something cooler.
Any feedback is appreciated

Get a link of andouille, grind it up and add it to the chilli. Also add some chocolate chips to smooth out the flavors.

Using brisket as your meat will definitely separate it from the typical ground beef.
I use Reve coffee stout in mine as well.
Searing your meat and veggies in bacon grease also helps add depth of flavor.

Hopefully you are grinding your on chili mix. The other thing people do in competitions is when you see the judges coming, hit your chili with another shot of the mix to make the flavor really pop.

Deer Valley Turkey Chili
This was one of the best chili's I have ever tasted. You can purchase their chili mix and it has the recipe on it. You can use chicken if you choose to as well. This page gives you tips on making it as well.

Do you have a smoker? If so do Over the Top chili. Season the meat up with whatever rub you want.

Try adding bourbon after you've added your chiles and spices, but before any other liquid - early enough so the alcohol has time to cook out.
Something about the strong alcohol really seems to make the spices burst with flavor. The smokiness of bourbon doesn't hurt, either.

I like using ground pork for the meat.
This is a good suggestion too. I cut some bacon into little bitty pieces and throw it in a pan with the veggies before going into the crock pot.

Make your own chili paste with dried chilies.
I like to brown my meat (brisket, chuck, short rib whatever) in golf ball sized chunks. Then toss them in the food processor to shred them up a little bit.

yep, and will give it a great smoky flavor.
I keep frozen brisket that i smoked just to make chili with.

I recently won a chili cook off with a pulled pork BBQ chili. I think the key is to do something that will distinguish your chili from the others and one that the consumers will be able to remember. Maybe a good food dish that is not necessarily known as a chili dish.

I always add a dark or amber beer to mine. Some chipotle in adobo is good too, a little goes a long way in a pot of chili.
