Milk in Meatloaf? A Panade.

Many meatloaf recipes use milk. Milk is used with the addition of bread or breadcrumbs to keep the meat moist. To me, milk is not appealing at all and I just don’t want to try milk in my meatloaf.

What about meatballs? I’ve always been taught to add bread (or breadcrumbs) soaked in water to meatballs. But I’ve never heard of using milk in meatballs, only meatloaf.

In fact, soaking bread in a liquid with the purpose of adding it to ground meat is known as panade. From what I’ve read, panade can be made with any liquid.

Does anyone use milk in their meatloaf or meatballs?

I don't like meatloaf, so never make it. I do remember mom used to put milk in hers when I was a kid.

I use ricotta cheese in meatballs instead of milk. An old Italian lady told me it does the same thing as milk and gives them better flavor and texture.

I didn't like meatloof for a long time. My mom made it with a boiled egg in the middle. Very dry and not very good. Discovers a stuffed meatloof with cheddar cheese in the middle and made with Chili Sauce, no milk. Turns out great with homemade mashed taters.

I always say I need to try a good meatloaf recipe to give it another shot. Mom's meatloaf growing up was pretty terrible. I'm pretty sure she used rolled oats in hers instead of bread crumbs. Meatloaf really isn't much different than meatballs, and I love meatballs.

I do use a small amount of milk in my meatloaf. About 1/2 cup for 2 lbs of meat. I find it makes for a moist meatloaf. I have done it without and didn't like the results as much.

I've used the recipe in the link below multiple times. It uses sour cream and milk. The texture is wonderful as far as meatloaf goes. I was never a meatloaf fan, but this one is worthy.
If I didn't tell you it had milk and sour cream, you would never know.

I’ve always made a panade for meatloaf and meatballs. Learned it from my time in a French restaurant making pâté

Might be my favorite part of cooking meatloaf...cold slice of leftover meatloaf on white bread with a healthy slathering of mayo the next day

I always enjoyed my mom's meatloaf growing up. My father in law made us a meatloaf when our first kid was born in order to help us out with some meals for the first couple of weeks. That mother fricker put an egg in the middle. Imagine my surprise cutting into that thing and see the egg inside. I had no clue that was a thing until that moment, and I'm still not sure I've heard of anyone else doing this until I saw your post.

It was nasty.

Not in meatballs and not typically in an oven meatloaf. If smoking it however, I soak the bread in buttermilk before mixing it in with the ground beef. I find it makes for a more moist final product.

I began adding a little milk to meatballs from tips on here. Nice addition for a moist meatball.

It wouldn’t be so fitting in our meatloaf recipe.

Not milk. Barbecue sauce though. Barbecue sauce in meatloaf is gud.

I use milk in a panade for meatballs and meatloaf. It helps keep them tender and juicy, not tough hockey pucks.

Those of you who don’t like your mom’s meatloaf should try it.

I cannot understand how a person can make a dry meatloaf. Y'all using 93/7 meat? I absolutely love meatloaf. Make it same way my mom did growing up. Egg, breadcrumbs/crackers, can of tomato sauce, and worcestershire. Turns out amazing every time.
