Okra in your Chicken/Sausage Gumbo or not?

If im making it okra only in seafood gumbo.

We use okra cooked down with tomatoes - my wife’s mom makes a bunch every year and we keep it in the freezer for use in gumbos. Can’t recognize either of them in the finished gumbo, but it tastes great.

Fried okra is probably one of my favorite foods

Seafood gumbo as a thickening agent. Chicken & sausage gumbo does not need it.

I put okra in chicken/sausage gumbo just as I do with my seafood gumbo too.
Adding it gives the meal another level of flavor and texture and when I add it to the pot it has already been stewed down for hours before hand and taken from my freezer to use specifically in gumbos and soups.
I grow my own okra every year, harvest it, cut it up and stew it down for hours and put in quart freezer bags to be used in gumbo and soup. By the end of okra season, I usually have as many as30 quarts in my freezer to use over the remainder of the year.
