Provide your absolute best pancake recipe

I am lazy and use the box, but substitute sour cream in addition to the milk. Learned that trick in old podunk Eureka Springs. Makes a very good, rich and fluffy pancake.

my wife and daughter make the pancakes so I don't know the recipe.
I just know they're really good and that they add Vanilla extract to the mix.

Old school buttermilk pancakes are a hit at my house. We do them on weekends and about once a month for dinner:
1 c flour
2 tsp sugar
1/2 tsp baking powder
1/4 tsp baking soda
pinch salt
1 c buttermilk
1 egg
splash vanilla
2 tbsp melted butter
Recipe can easily be scaled
Sometimes I sub whole wheat flour and they are very good as well

(1) 7.6 oz pkg of Martha white banana nut muffin mix
(1) large egg
2/3 cup milk
Mix well and pour into hot skillet or griddle and flip with spatula when topside is bubbly.

go3/4 cup of milk but add two dollops of sourcream and thats basicaaly how we do it .

1 tps baking soda
1/8 tsp salt
1 large egg beaten
2 TBS salted butter melted
3 TBS sugar
1/2 tsp vanilla
1.25 cups buttermilk
-Sift the dry ingredients and then whisk together in a bowl.
-Beat egg, sugar, and butter in a large bowl until smooth and creamy.
-Add buttermilk to egg mixture until incorporated.
-Slowly add in dry ingredients to the wet mixture with a spatula and don't overmix (lumps are ok)
-Preheat griddle or skillet to medium and lightly grease with butter before every pancake.

If you've never tried the sweet cream pancake mix from Krusteaz, do yourself a favor. It is simple but delicious.
ETA: I'm a guy who makes almost everything from scratch, but since someone introduced me to these, I have not made homemade pancakes.

My wife is a pancake girl. If they are on the menu, she gets them. This is the mix from her favorite pancake place. Penny Ann's Cafe in Salt Lake City. They are better at the cafe, but the mix is very good.

my wife made carrot cake pancakes a while back and they were insane. Basic pancake mix with shredded carrots, carrot juice for some of the liquid, and pecans. a little cream cheese/sugar dollop and maple syrup
last batch was basic blueberry pancakes but she added lemon zest (fantastic) and bananas on top, yum

I make bacon pancakes with Kodiak buttermilk waffle mix using the milk and egg recipe. I prefer thick cut bacon
Cook bacon and set aside. Pour thin layer of batter on griddle sorta of like a large dollar bill rather than round. Add one or two strips of bacon then cover with another thin layer. You can also lay cooked bacon on griddle first then cover with a single layer of pancake mix.
Cook pancakes until done.
Microwave a few tablespoons of butter till melted then add real 100% maple syrup, microwave until warm, stir and pour over pancakes.

Krusteaz Sweet Cream mix is the best I’ve had and I can’t beat it with homemade.

Simple is best. Maybe mixing it up and using buttermilk or throwing in some lemon zest once in a while.

1/2 c low-fat buttermilk
1/2 c skim milk

1 Tbs canola oil
2 Tbs brown sugar, packed
1/2 tsp salt
1 tsp baking powder
1/2 c whole wheat flour
1/2 c flour
1 tsp cinnamon
1/2 tsp baking soda
In medium bowl, combine oats and milks. Set aside for 15-20 minutes.
Beat in the egg whites and oil. Add dry ingredients. Mix until just moistened.
Cook like pancakes.
