Pulled Pork Quantities for 35

I am smoking some pork butts for a meeting Monday night. We typically have 30-35 men there. On the menu will be pulled pork sandwiches (using mini-poboy bun) and baked beans along with a desert. Will a twin pack of Boston Butts be enough?

Do the math....


1 butt weighs 8-10 pounds.

1 butt will yield about 6 pounds of finished meat.

For sandwiches, I'd figure 1/2 pound of meat per serving for big servings.

For sandwiches, I'd figure 1/3 pound of meat per serving for smaller servings.

1 butt will give you at least 12 large servings or 18 smaller servings.

2 butts will give you at least 24 large servings or 36 smaller servings.



Yes, you will get by with 2 butts. If you want extra, you will need a third.

Base it upon raw meat. The usual factor with a mixed crowd is 1/4 pound protein per person, assuming sides will be offered. You mentioned it was men, so up the qty a little bit.

It’s not a mixed crowd and he has one side and a dessert. 1/4 pound pulled pork on a mini poboy bun seems stingy. This is why I enjoy discussing topics like this instead of leaving vague answers.

We do 10 butts to get 200-220 poboys. We overstuff.

I read your first post when you said 1/2 pound meat per person, then your second post that said 1/4 pound serving per person for a mixed crowd but since it’s men, add more. So I was trying to clarify for other posters reading how the 1/4 pound serving but more for men relates to the 1/2 pound meat.

We are just talking food, bro. No need to get all worked up.

We get a family meal from a local BBQ place, and you can either get a pound or a pound and a half of pulled pork. They must be figuring 1/4 a pound a sandwich, since one comes with 4 buns and the other with 6. It is plenty of meat for one sandwich, but with 35 men there, no women or kids, go for a half pound per and you will probably end up with a little leftover.

I went to two stores today and didn't find any pork butt's so the menu maybe changing.

Ended up getting 4 small Boston Butt's, about 7 1/2 pounds each so they can cook evenly. They in the smoker now. Whatever we don't eat I'll vacuum seal for a later date.

This was the right answer. If you have the grill or cooking space to cook 3 or 4, and as the main protein, the risk of running out to save less than $20 doesn’t make sense.
