Red beans question

I was planning on making red beans tonight but too tired and don’t feel like staying up to finish it. Problem is I boiled the beans this evening instead of doing the overnight soak. Question is can I just let them continue to soak until tomorrow?

Yes. Dump the water and put fresh cool water. Go to bed.

Yep. Put them in the fridge if you're concerned with food safety.

For some reason I can never get red beans right. It always kicks my arse. Not a dish I love so I don’t cook it that often. But the first time I cooked it the beans were undercooked and it was too soupy. The second time, I over seasoned it and it was too salty.
When I get ready I’ll try it again.
Such a simple dish and I haven’t figured it out yet.

Blue runner + trinity + good smoked sausage is very hard to beat. Not sure why anyone would make em from scratch with that option.

I like the process of it and I also get rid of scrap smoked pork by cooking from scratch.

A can of Blue Runner beans are already salty, I guess we have different tastebuds.
A couple cans of BR beans with sausage and bacon are plenty salty, outside of adding some Crystals Hot sauce they wouldn’t need anything else with salt.

A can or two of Blue Runner red beans is also good for thickening red beans that are too watery, since the canned beans are mostly paste.

That method is fine if you’re feeling super lazy but nothing beats making them from scratch. It’s not like making them from scratch is hard

Really???? The reason red beans got so popular on Mondays in the first place is because it's an easy thing to cook while housewives did the laundry.
It only requires a little bit of attention to keep them from sticking to the bottom of the pot as they simmer and soften up.
To make it easier and even less hands-on, I use a metal heat diffuser that goes between the fire on the stove and the bottom of the pot and this eliminates hot spots in the pot and prevents scorching as I go about doing other things.
I like to use chunks of ham at the onset and will add my sausage pieces to the pot in the last hour or so of the cooking time. I find if added early on, the sausage becomes fairly bland as the flavor is cooked out of it.

And no, it is not hard to beat at all. Is it good in a pinch? Sure. It's not anywhere near as good as homemade unless the cook doesn't know what he's doing.

For me, that pretty much goes for anything that comes from a can. The only way canned stuff is better is if the person cooking it has no clue how to cook, otherwise, give me home-cooked every time.

Well cook it longer until the beans are done? If it's "too soup", remove some of the liquid.

That can happen. Just add a little salt at a time and taste until you get the amount you want.

Are you following a recipe? The back of the camellia red beans package has a standard recipe that is hard to mess up.
