Red Snapper recipe

anyone got a go-to recipe for fresh red snapper?

is it whole, filet or filet with skin on?
If whole, fry it or grill it and top with a chimichurri (sp?) sauce. I did simial from my garden last night and pulled mint, basil, green onions and parsley. stuck in a food processor with garlic, EVOO, salt and pepper and lemon juice.
If a filet, pan sear and top with a lemon butter sauce.

If you have it as a filet with the scales on, plob it on the grill scales side down, and season with some butter and some lemon pepper seasoning. Hard to beat.

Hard to beat. Sometimes I go lemon pepper, but always cook them in the pan in butter. If I'm cooking multiple types of fish like after a fishing trip, I'll cook them in the oven on 350 with a pat of butter on top and season each type of fish differently.
Snapper is also good with a little Old Bay or Everglades. Just don't go overboard with Everglades as it is seriously salty.

cut into thin strips, beer batter and fry. put on a fresh made tortilla with mango salsa, avocado, and either cabbage and Mexican crema or a limed sour cream.

for red or Mangrove snapper with scales/skin on I usually lightly season with oil, salt, pepper/lemon and grill. just before it's finished i remove it from the grill and and then make a compound citrus butter to broil on top as crust
