Going to make rice dressing for the 4th. I have some Savoies dressing mix. What's a good recipe using that. Thanks!

use hot breakfast sausage as your meat

Haven't used their mix in a few years but they used to have a recipe on the side of the tub that worked pretty good. I'm sure my wife would add a little pinch of something here and there but she didn't have to over-doctor it up.
Also, if you want to use it for more than just a side dish, Make some. Then flatten out a pork tenderloin, stuff it in there, smoke it, and pinwheel slice it.

I've always heard mix with ground pork or beef. There does seem some variation on cooking the rice in the meat mixture or cooking separately then mixing.

IMO: Always cook with the meat mix.

Tried other brands but much rather Savoie's. I use it as per the directions. I like to use day old rice. IMO rice that is just cooked is too wet and doesn't a soak up the sauce as well as "dried" rice.

smother it down with some eggplant and grind meat

You are the only other person I've ever heard of that does this. If you can find green eggplant, use that and chop it fine...it will dissolve. Purple eggplant works good too.
And +1 to whoever said add some breakfast sausage. I usually mix ground meat and breakfast sausage.

Savoie's is alright but I prefer Richard's. Fry off 3 pieces of bacon and remove from pan. Saute a little trinity and add ~1lb of Rouse's loose cajun sausage. Once it's brown pour your tub of dressing mix in and cook it down mixing it in well. Add your cooked rice until you have your desired ratio of rice to meat, your crumbled bacon and a handful of chopped green onoins. Turn the heat off (unless it's too wet) and serve.

What GeauxTigers said but, I add some chicken livers to the meat mix, and before adding the rice, I add a couple teaspoons of roux, makes to very rich flavored

I brown 2 small onions, a shallot and a bell pepper down, not to dark, just beyond clear with a little brown to them. I add 2lbs of ground meat (pork, sausage or beef) and brown that, add my Savoies mix and cook it for 20-30 minutes. In the last 5 minutes I add 1/2 bunch green onions. I mix that with 3 cups of rice that I cooked the day before.
