Serving size for red beans and rice (large scale)

When cooking red beans and rice for large groups of people (12+), how many people do you figure a lb of dry beans will feed using a standard recipe? I want to make the red beans with ham and provide one large link of smoked sausage per serving.

A pound of dry beans will make 8 cups of cooked beans if it has 3/4 lb of sausage in it. How big a serving do you want?
The rice should be 2/3 the amount of your beans per serving. So cook between 5 & 6 cups of rice (cooked) per pound of dry beans.

Just cook 2 lbs. of beans with the appropriate amount of sausage/ham/pickle meat/ham hocks or whatever meat you want to use and fix a pot of rice.
If you want to go a bit further, fix a pan of cornbread to go with it.

I'd do 4 pounds of beans. Leftover red beans are a gift from God, should you have any. And you should.

I agree since I often cook 4 lbs. of beans myself and wind up putting several quart bags in the freezer for later use. Just last night I pulled 2 quart bags for dinner and 4 of us ate and I still have at least 2 nice servings left in the fridge.
You can't hurt beans freezing them. Just make sure if you use freezer bags to "burp" the bag to get the air out before zipping it closed and they will stay fresh longer.

Load up on sausage and it'll go further.
I did 4 lbs of beans in my last batch and it served over 20.
