White beans and bread are traditional. I usually don't even make a side.

Cornbread
Sliced Avocado to put in the jambalaya.... may sound weird but it is good in a spicy jambalya

Collard greens.
Though jambalaya is such a brazen meal that a salty, bacon-rich pot of greens might be too much.
French green beans, blanched and quickly sautéed in butter, then dressed in a mustard dressing would be my pick.

White beans and potato salad is traditional, but I would rather something green vs starchy, green salad and green beans or broccoli
But if you are doing a fund raiser. Please save yourself the expense and trouble of adding a predressed salad in a foam meal box that will sit for hours and become way to wilted to eat

White beans and coleslaw. Coleslaw I shread it really finely on a Mandolin and season with a little creole seasoning blend and Italian Dressing.

I’m a fan of black eyed peas with my jambalaya. I then mix it together with the jambalaya.

I'm going to saute some okra tonight with my jambalaya.....not fried, just sauted, which I like better than fried okra.
