Sirloin Cap Steak From Costco

I bought a pack of sirloin cap steaks from Costco that are sliced into portions about the size of pork country ribs. Anyone have any good recipes for them? I split the pack in two, and was thinking of doing one portion like a pot roast or short ribs and maybe grilling the other portion

Pretty sure that is picanha with the fat cap removed(I might be wrong).

I would go hot and fast.

Marinate in Italian dressing for a day or two to break down the muscle. Do not salt, I do season with a little granulated garlic and pepper. 5-6 minutes each side on medium-high grill. As an above poster said, do not cook beyond medium rare.

Medium rare on the grill with salt and pepper is perfect for me. Not buying ribeyes again

Made kabobs with the last ones I bought. Really is a nice prime cut for the price.

Tried that - too chewy. It’s sirloin, so the muscle needs an acidic marinade to tenderize the cut.
