Squirrel & Dumplings [Pics]

wryder1 mentioned squirrel recipes yesterday, and I was making my favorite squirrel dish last night so I took a few pictures. I am bad about remembering to take pics so I only have a few, but it came out really good. This is a pretty simple dish that you could make 100 different ways, but this was pretty easy cooking.

I boiled the squirrel in chicken broth with salt/pepper/bay leaves for about two hours, then removed and pulled all the meat off the bones.


About halfway through I started making a roux with 1/2c butter and flour. When it was done I threw in the trinity, jalapenos, and carrots to cook down, and I added minced garlic when it was almost done.


Then I mixed in the stock, cream corn, whole corn, cream of chicken, cream of celery, petit pois peas, and seasoning. I brought this to a simmer and cut up some buttermilk biscuits for dumplings. I simmered them in the mixture for about 10min and it was ready to go. I know a lot of people aren't fans of squirrel, but this came out delicious.


Recipe:
4-5 Squirrels (If you only have a few add some rotisserie chicken or other meat.)
1 stick of butter
1/2-3/4c flour
1 jar of Guidry's (or equivalent bell pepper/onion/celery)
~4 jalapenos diced
~4 carrots diced
~4 bay leaves
1 can of peas (petit pois preferred)
1 can cream corn
1 can whole corn
1 can cream of chicken
1 can cream of celery
A lot of minced garlic
1 can of buttermilk biscuits (not flaky)
Worstishire/Salt/Black Pepper/Red Pepper/Garlic Powder

Boil squirrel in chicken stock (~8c) for ~2hrs until it comes off the bone easy (I add salt/pepper/bay leaves). You may have to add water periodically to keep the squirrels covered. Remove the squirrel to debone and save the stock for later. You could also do this in a crock pot to save time.

Chop the carrots and Jalapenos.

Cook a roux w/ 1/2c butter and 1/2-3/4c flour preferably in a 7qt+ dutch oven. Add the trinity/jalapenos/carrots and cook until translucent. Add garlic and cook for 2min or so.

Slowly stir in the stock from boiling the squirrels. Add the canned goods. Bring to a simmer and season to taste. Cut/add cut biscuits into the pot and cover/cook for ~10min at a simmer. Enjoy.

I think I've had squirrel every other way though

Yeah I wrote out a little recipe. It is very simple. I will type it out and edit to add to the original post.

A lot of people make their own dumplings, its pretty easy but just takes more time. That being said I see a lot of people also say the biscuits from the store really aren't much different after it's all said and done. I just use the Pillsbury Grands Southern Homestyle Buttermilk Biscuits, but honestly any of the can biscuits will make dumplings.

I like the biscuits in that dish. You could also use these more traditional flat dumplings.

Looks good. We ate a ton of squirrel dumplings as a kid and rabbit dumplings as well.

My mom would boil flour tortillas as the dumplings instead of biscuit mix.
