Sweet potato recipes

Recently discovered that I really like sweet potatoes. The thing is I've only had them a fries and in pies and I'd like to expand beyond that. So of course my first stop is to tap the knowledge of the FDB. Really not looking for dessert recipes but I'd love to hear what else you have. TIA

I roast them quite often similar to what CE said. You can stuff them, make soup/bisque with them, cook gratin style. They make a terrific sauce of sorts sliced, baked in heavy cream with parm cheese. Takes a while, but the end result is mighty tasty particularly with fresh Louisiana sweet potatoes.

Yeah. I roast them as well for a variety of dishes. My wife is a vegetarian and they're one of our staples. I cube them up, roast them with cumin and chili powder, and use them as filling for tacos along with black beans. I roast them with paprika, salt and pepper and mix in with quinoa and a balsamic/honey dressing.
You can also make them into wedges and bake them which is delicious. I use the roasted ones as a pizza topping with a caramelized onion "sauce" and arugula as well. They're a great versatile ingredient.

Sweet Potato Pancakes
Wrap a sweet potato or 4 individually in foil withn a pat of butter and bake for 45 mins to an hour at 350. You should easily be able to stick a knife or fork in the potato.
Mash the baked sweet potato well, with a fork. You can also throw in a mashed banana.
Make pancake mix according to instructions on the box for 4 or 6 (I like whole wheat pancake mix) and add the sweet potato.
Cook pancakes according to instructions on the box.

I do this except I use siracha, white pepper, chipolte powder, olive oil and a little crushed red pepper. 450° for 20 minutes.

yep...theyre really good cut into small sections and baked with salt and pepper and a little olive oil.

i like quartering them, baking in the oven drizzled with olive oil and chili powder and salt in a black iron skillet. When they are done add toppings like you would put on loaded nachos (black beans, ground meat, cheese) throw back in oven till melted. then hit it with some salsa and green onions.

orrrrr, you can wash it, rub some bacon grease around on it, wrap it up with a wet paper towel, micronuke it for about 5-6 minutes, roll it over and do the same thing on the other side, peel it, squish it, put a glob of butter on it, and eat it.

sweet potato casserole.
I never make it, but its a staple around here around the holidays. I know it involves brown sugar, nutmeg, cinnamon., butter. topped with marshmellows (baked in oven)
