I love me some greens of all types. But TBH, I really can't tell much difference.

We grow, freeze, and cook Collards exclusively. I would not decline the other 2.

Collards here. Milder and more "meat" to the leafy green than both mustard and turnip greens.
I find mustard and turnip greens have a bit of a bite at the end I don't find appetizing.

I mix them. 2 parts mustards, 1 part each of collards and turnips. Add diced onion, salt and pepper, and smoked turkey wings for flavor. Simmer until very done. Pick the meat off the wings and stir into the greens. Serve with pepper sauce and cornbread.
Collards need to be picked young and tender. They'll get strong on you when big.
