Uses for Sushi Ginger

I'm not a sushi eater and hadn't had sushi ginger. We had some boiled shrimp that came with a seasoned butter sauce on the side and someone added the ginger to the sauce. It was really tasty. Do you use in other dishes?

Not sure what the ginger could be used for, but I will say this...I grew up in NWLA in a home that would be considered redneck. The kind where if sushi was mentioned, jokes were made about using it for bait.
The first time I had sushi I was probably in my 20's and I thought the ginger was sliced ham and took a big bite of it. Talk about a surprise!

Put it on sandwiches or tacos, you can also add it to salads.

Vinaigrettes/ dressings (especially sesame ginger), marinades, & sauces (gastriques).
We had so much of that laying around that we experimented with it a lot. I don't have any recipes, but I know anytime we made anything with fresh ginger, a little gari went in too.

You can eat it by itself as a side or use it in place of a relish or pickle with other things.
