Is it ever explained how Sarah Connor knew Enrique or how their relationship was established?

She was a paramilitary nut after T1. They were probably some kind of counter-revolutionaries or guerllillas terrorist types from Latin America that had weapons and training and black market access.
She probably got hooked up with them after the first film when it was clear she was heading out of the city and into the desert to wait for the future and train John.

I believe the character had additional story and presence in the novels and comics, etc. I don’t know the backstory. I’ve only ever just watched the movies (countless times).

It's intentionally left vague. Show don't tell, that's how great stories work.
After T1 she clearly became super into weapons and survival training, they make allusions to her life between T1 and T2 several times and she's clearly living off the grid and running around with a rough and tumble crowd.

I always thought that this was the answer. I figured they either cut out any scenes explaining it or left it for the audience to decide.

I think the RPG wasn’t a video game but a tabletop role playing game. Like dungeons and dragons
