smell test, always. Even if you didnt leave it out. Ive got some bunk meat before.

Just so you don't cook it rare. I wouldn't worry with medium or well done at all.

Assuming there's salt in it, it's probably okay. I wouldn't eat it. Avoiding food poisoning is worth a lot more than $15-20

Probably why I like Dale's so much. I don't really use it in steak, but burgers and grilled zucchini/eggplant? It tastes like my childhood

You will be fine. There is enough salt in there to keep it from spoiling, especially if it is lean flank steak like you mentioned. Trim the outer edges as a precaution maybe.
