I have 2 azaleas that is like to cut back a good bit as they’ve gotten quite big. My plan is to wait until the end of winter and do it right before spring? Is that the best time? I know it won’t bloom this year which is fine

Cut after they bloom. Why not wait a few more weeks?

Agree. Cut now and you'll not have many blooms this spring. After the blooms die off, then cut them back. I do this every year for my sister-in-law.

I’m wanting to cut them back pretty substantially... I guess they’ll bloom in another month or 2 and I can wait until then.

I've always heard that rose bushes should be cut by Feb 15th.

Azaleas after they're completely done blooming and before June 1st.

If the OP doesn't care about his azaleas blooming this year, he can probably whack them back now. Opening up the shrub and clearing the dead wood and the really spindlely and leggy growth from the interior will allow more sun to penetrate and give you fuller growth next year.

And if you REALLY want to know what to do, call Dan Gill on Saturday morning. He can be kind of a dick sometimes, but that guy knows his shite about horticulture.

Or go to Cleggs on Siegan and talk to Johnny Naylor.

Knockout roses can be trimmed anytime. Standards in August or February and always cut above 5 leaves.

After they bloom. Never after July 4th.
