Relaxing couples trip?

Looking to try someplace different for a somewhat quick get away with my wife. Looking to stay in the US most likely to make air travel easier something like leave on a Thursday afternoon return on a Sunday.
Looking for no kids, place likely a resort we could leave if wanted to but nice enough to stay and not leave if we are enjoying ourselves and relaxing. Needs a good bar and good food. Budget is fairly high for such a short trip. Anyone have a place the like a lot, would be going over the summer FYI, likely late June.

Lot of great areas with solid resorts.
Sea Island/St. Simons Island/Jekyl Island - Cloister in Sea Island gets a lot of love and I know people who have been that say it is awesome. Lots of resorts in the area. Plenty of good food/bars/golf.
Scottsdale - Plenty of great sorts with solid food/bars/pools/spas. Have stayed at the Fairmont Princess resort and it was very nice. Staying at the Biltmore Arizona next month and looking forward to it.
Palm Springs - plenty of nice resorts to relax and kick back.
Half Moon Bay - I've heard great things about the Ritz-Carlton at Half Moon Bay south of SF. Definitely pricey though
Breckenridge - Little different than the above, but I love the mountains in the summer. Weather is typically great and tons to do. Great hiking, fly fishing, golf will be open by then I think.

The Disney Resort in Vero Beach is really nice. It is on a quiet stretch of beach. There is a restaurant and bar on site. The times I've been, there have not been many children, and this is the last Disney resort I would want to go to if I was a kid. It's really nice, as it's Disney.
Good restaurants in Sebastian and Vero Beach. Cape Canaveral is a good day trip and there are launches all the time. A few nice breweries and a couple of distilleries. 21st Amendment distillery is very patriotic and has a cool speakeasy feel to it all the bartenders and servers where vests and ties.
Botanical gardens, fishing excursions, airboat tours, nature trails, beaches are all available. Beaches are easily accessible, not crowded, and underrated. There is a lot of live music in Vero and Sebastian at bars and public parks.
It is a relaxation trip. Things move a little slower in Vero. Not a lot of nightlife after 9:00 PM. Always a concert every Th/Fr/Sa night from 5:30-9:00 at the Riverside Park in Vero. You won't find heavy traffic or big crowds, and the beach may be mostly empty. But that's the way we like it...

Go to Durango in the fall. Fun town, do the scenic loop, see the Pueblo houses, eat in Telluride, drive the million dollar Highway.
Hike a little, ride the train if you want. Easy weekend.
