Meatball stew question

Do u brown your meatballs first or drop in raw? And if you brown them will they become too dry?

It’s hamburger steak in a ball. Pretty sure it’s gonna come out fine either way.

I brown them. I have been known to lightly dredge them in milk and seasoned flour. Extra work, but you can taste it in the finished dish.

Either way, just make sure there is some Parmesan cheese in that meatball. Good eating.

As I thought about this, I remembered once, when out of bordum, I made small (1 inch diameter, 3/8 inch thick, not tightly compressed) burger patties, froze and then breaded them - into milk, then seasoned flour, then browned them before making my stew. They were great.

I thought I had a photo, but can't find it.

I brown them and deglaze the fond with sherry before adding flour and making the roux. I do this with any non-seafood protein when making gravy/stew.

Never had an issue with them being dry - though my meatballs start with a decent amount of fat in them (mix of 80% chuck and ground pancetta with parmesan).

I bake them. Any drippings during the baking process are caught in a pad and added into the pot.

I brown them a little, take them out, brown my onions, add a little roux, make a gravy, then add my meatballs back and cook them till they done.

I'm sure what OP is referring to is like a rice & gravy, and is called meatball fricassee by others.

This is a great recipe, except I don't crumble bread for my meatballs. I find it holds together fine just with an egg binder.

Thanks. Assumed so but wanted to make sure I wasn’t missing out on something!

My MIL makes that dish and I love it.

tell us more of how you have no clue what you are talking about? in your slew of terrible takes, this is in contention for one of the worst. congrats, I guess.

Whether I am stewing them in brown gravy or tomato sauce, I almost always brown or bake them first. You don't want to miss out on that killer maillard reaction which gives incredible flavor. The only times I don't is when I am rushing, but even then I just do a meat sauce.

I've seen meatball stew on this board get overhyped by a few like it's a secret undiscovered Cajun dish that only people who grew up in a place like Kaplan know how to make. I enjoy it, it's good and it is a unique dish. But it's not a complicated recipe. You make meatballs and cook them in a brown gravy. There's no one way to make it and I'm sure just about every way comes out just fine.

As far as slew of terrible takes, well that's like your opinion, man.

This is a good one. IMO would be a little better with a few carrots, potatoes, and turnips added to the mix.
