Cold water immersions can limit the gains in hypertrophy, strength or endurance.
People do it to help focus, mood and energy because increase causes the release of dopamine, epinephrine, and norepinephrine in the brain and body.
There are also some suggestions it can improve immune response.

Are there proven benefits that exceed the shock/stress?

Not being flippant. Curious as I have not seen any research on it.
